Chotto Matte reveals global expansion plans: Chotto Matte, the Nikkei cuisine concept founded by Kurt Zdesar, has outlined further global expansion plans. The Peruvian-Japanese fusion restaurant launched in Soho in 2013, introducing London to Nikkei cuisine for the first time. Zdesar has revealed plans to expand the concept, with new locations planned for the United States, Middle East and UK. The business plans to open in Riyadh in November 2023 and San Francisco in the third quarter of 2023. Further openings are scheduled for Beverly Hills in the first quarter of 2024, Manchester in summer 2024, and Nashville and Philadelphia at some point in 2024. Chotto Matte “offers a refreshing take on fine dining, transporting guests with a multi-sensory experience”. Chotto Matte said it continues to evolve the concept, and “push the boundaries and vision of the restaurant scene”. Current outposts include Soho, Miami, Toronto, Doha and a second London site in Marylebone, which opened last year. The concept’s menu is led by global executive chef Jordan Sclare, with innovation and craftmanship always at the forefront. The Tokyo to Lima inspired cocktail collection also features, with an exclusive selection of sips per site, “developed to showcase local trends and produce”. Each sub-collection channels the essence of its location and provides a distinctive flair between each restaurant. Prominent features include Japanese lava stone, exotic foliage and striking art installations, inspired by Tokyo’s contemporary urban culture. Zdesar said: “We believe that our concept has a global appeal, and we are excited to bring Chotto Matte to new audiences around the world. We chose these locations as our expansion destinations because they are all international hubs with a diverse and cosmopolitan population. Each location presents a unique opportunity to showcase our offering and adapt it to the local culture and tastes.” Chotto Matte features in the Propel Multi-Site Database, the latest version of which will be sent to Premium subscribers on Friday (28 April). A total of 23 new multi-site companies, operating 181 sites, have been added to the next edition of the database, which is produced in association with Virgate. The comprehensive database is updated monthly and provides company names, the people in charge, how many sites each firm operates, its trading name and its registered name at Companies House if different. The database now features 2,832 companies. Companies can now have an unlimited number of people receive access to Propel Premium for a year for £995 plus VAT – whether they are an operator or a supplier.
